HOMEMADE EGG DROP SOUP RECIPE

I realize the amount of Asian recipes on this blog I can count on one hand. But one of my favorite Asian recipes that I love is simple Chinese soup recipe.

It’s something I always order at Chinese restaurants and love when it’s cold, I’m sick, or if I’m eating healthy and want something to fill me up. It’s sometimes called Egg Flower Soup.

You will be surprised that this is the easiest soup with minimal ingredients. Faster than making chicken noodle soup, this soup might become your new staple recipe.

WHAT IS EGG DROP SOUP?

Egg Drop Soup is a chicken broth based Chinese soup often thickened with cornstarch and seasoned with soy sauce, ginger, and green onions.

A beaten egg is stirred in the hot soup and makes the soup thick with beautiful egg ribbons. This is better than takeout!

INGREDIENTS

  • CHICKEN BROTH – you can use vegetable broth as well for another option. This is the soup base. Homemade chicken broth would make for a delicious soup but is not required.
  • SOY SAUCE – I like to use low-sodium soy sauce. Just one tablespoon soy sauce gives this tons of flavor. You could use coconut aminos for a healthier option.
  • GROUND GINGER – you can use fresh ginger if you have it on hand. Minced ginger is a little more of a strong flavor.
  • CORNSTARCH – use Xanthum gum for Keto option. The cornstarch mixture is the thickening agent for the soup. For a thicker texture increase the amount of cornstarch.
  • EGGS – raw eggs are stirred into a hot broth. Fresh eggs give this soup lots of protein. This is the only ingredient you can’t substitute.
  • GREEN ONIONS – or chopped scallions are the perfect flavor addition. You can also use the scallion whites.

Yes. It’s very low calorie and packed with protein! One bowl of soup (about 1 cup) is only 71 calories.

IS THIS KETO FRIENDLY?

Yes. There are only 5 grams of carbs in each serving of this soup making it keto-friendly. You can also add more sesame oil for more fat which is good on the keto diet. HOW TO MAKE EGG DROP SOUP

  1. In a medium pot, bring the chicken stock, soy sauce, and ground ginger to a boil.

  2. In a small bowl, combine the cornstarch and water. Pour into the boiling broth and stir until thickened.

  3. Reduce heat to a simmer. Slowly whisk the beaten eggs in a thin stream with a fork into the soup while gently stirring in a circular motion. The wispy eggs will cook in the broth.

  4. Remove from heat and add the salt, sesame oil (if using), and garnish with green onions on top of the soup. Add more salt to taste and serve. Store leftovers in the fridge in an airtight container.

This soup uses cornstarch to give it that thicker consistency.

Ingredients

  • 4 cups low-sodium chicken broth, (I like better than Bouillon chicken base)
  • 1 tablespoon reduced-sodium soy sauce
  • 1/4 teaspoon ground ginger
  • 2 tablespoons cornstarch, For Keto use 1/2 teaspoon Xanthum gum
  • 2 tablespoons water
  • 2 large eggs, beaten
  • 1/4 teaspoon kosher salt, (more to taste)
  • optional 1/4 teaspoon sesame oil, (see note)
  • 1/4 cup sliced green onions

Instructions

  • In a pot, bring the chicken broth, soy sauce, and ground ginger to a boil.

  • In a small bowl, combine the cornstarch and cold water. Stir the cornstarch slurry into the boiling broth until thickened.

  • Reduce heat to a simmer. Slowly drizzle the whisked eggs into the soup while gently stirring in a circle motion in the same direction.

  • Remove from heat and add the salt, sesame oil (if using), and green onions. Add more salt to taste and serve.

Notes

Sesame oil is not absolutely necessary but a little sesame oil gives the soup a really nice flavor. it is a rare ingredient that most people don't have on hand but tastes great if you have it.

    Tried your recipe, it was easy to make and tasted delightful. The only thing that didn’t look quite right was the eggs. I don’t know if I over scrambled them or under scrambled them but my eggs came out like little balls instead of the normal “leaves or petals shape”. Did I pour too quickly? Should I have let the cornstarch cook a little longer before adding the eggs? Any suggestions?

    I had a double tooth extraction a few days ago and have been struggling to find soft foods that are hearty and filling. I thought of egg drop soup and found your recipe. Wow, is it ever tasty! I already had everything on hand, so this was perfect. I added a smidge if chicken bullion powder instead of extra salt and also a bit of turmeric for color. It’s better than what I get from take-out. I think this will be a new staple comfort meal for me. Thank you!

    Delicious and super easy. I made one serving for myself so 2 cups liquid (1 cup unsalted chicken stock which is all I had and 1 cup water) and adjusted the salt to taste. It’s super filling and warms you right up. I had a bowl for an early lunch, took a nap, woke up and still feel full!

    This was SO easy and SO delicious!!! It took all sorts of willpower to keep me from eating more than 2 Servings!
    I did follow the recommendations in the recipe and also tweaked a few things … Coconut Aminos in lieu of Soy Sauce; 3 Eggs (instead of 2); Reduced to 1/2TBS Cornstarch + 1/8tsp Xanthum Gum; Added 1/2tsp Fish Sauce & 1/4tsp Trade Joe’s Umami Seasoning. The Salt, Toasted Sesame Oil and Green Onions were added to preference. (I did not salt mine, as the flavor was fantastic.) This one is going into the “forever” recipe book. Thank You! :]

      getting ready to go to the store and get the green onions and try this recipe. It sound really good will let you know how it turns out. I have everything but the green onions on hand ,I even have the sesame oil on hand.     Hi – have you considered using Xanthan Gum Pure Powder, Kosher and Gluten-Free Natural Thickener in place of the corn starch? May lower the carb count. I use it alot its a great thickening agent.

    Your egg drop soup is very tasty. I added one more ingredient to the soup which both my wife and I think it took over the cliff….yum!! I added some fish sauce to it as well 1/2 tsp or to taste.

    Craving a warm bowl on this cold morning and needing keto, I remembered egg drop soup. I used bullion which is lower in carbs, and omitted the cornstarch. Within minutes I had a lovely mug of warm, tasty soup. I’m not sure I would have added the ginger but I’m glad I did.
    Adding more eggs will thicken it up if you feel the necessity.

    This was awesome! My mom loves egg drop soup but has a heart problem and we cannot order it out. We used the better then boullion for the broth. Also we used coconut aminos for the soy sauce. Only 90 mg of sodium per teaspoon and it is great!

    Thank you for posting this recipe. As others have said, I’ve been sick and living on take-out egg drop. It’s good but I liked this better, more egg for adding 2 eggs and the additions of ginger and sesame oil pump up the taste factor
