Banana Bread With Coconut Flour

My kids adore this banana bread with coconut flour with meals or as a sweet treat. The past couple of months I had made this banana bread recipe for them a couple of times and I thought I’d see if I could adapt the recipe to be gluten free.

As I enjoy baking with coconut flour, that was my flour of choice. The resulting banana bread is moist, tasty and you won’t even believe it’s gluten free.(And, as an update – I’m still making this recipe, exactly as shared, years later!)

Gluten Free Banana Bread Ingredients

As mentioned, I chose to use coconut flour as my gluten free flour of choice. When baking with coconut flour, you only need about a quarter to a third of the recommended flour.

Because coconut flour is super absorbent, you need to also increase the quantity of eggs to ensure you don’t end up with a dry baked good.

I chose to use unsalted butter. If you’d prefer to create a dairy free, paleo friendly banana bread then swap in 1/3 of a cup of melted coconut oil instead.

Be sure to use spotty, extra ripe bananas. They will be easy to mash and perfectly sweet for enjoying in banana bread.

Regarding the sweetness, I chose to use 1/3 of a cup of coconut sugar. When blended with the sweet bananas, we found it to be perfectly sweet. You may prefer a half a cup (or more) of coconut sugar. Or, feel free to use sugar, maple syrup or your sweetener of choice in this recipe.

How To Make Gluten Free Banana Bread

Why did my gluten-free banana bread not rise? ›

Of course make sure that your yeast and baking powder is still active and fresh. Your bread will not rise if your yeast or baking powder has expired. A dense loaf could also be the result of not measuring your ingredients accurately.

What is the ratio of coconut flour to all purpose flour? ›

Use a 1:4 ratio when substituting coconut flour with all-purpose flour. This means that for every 1 cup of regular flour, you only use ¼ cup of coconut flour.

Why is my gluten-free banana bread mushy? ›

Bananas--I don't use overly ripe bananas like most people. I prefer less ripe bananas for my banana bread. Less ripe bananas means less mushy banana bread.

What is the secret to baking with coconut flour? ›

A quick rule of thumb is to swap about 1/4 to 1/3 cup coconut flour for 1 cup of regular flour. Due to its high absorbency, you'll also want to increase the number of eggs. To help you try this unique ingredient, we've rounded up eight of our best coconut flour recipes.

Does coconut flour spike blood sugar? ›

Coconut flour appears to have a low glycaemic index of 51 which means it should cause less of a spike in blood sugar levels than wheat flour, which has a glycaemic index of 69. This is because coconut flour is high in fat and fibre, which work to slow down the release of sugar in the bloodstream.

What is the secret to getting gluten-free bread to rise? ›

Eggs are natural leaveners that help boost the rise and volume of bread. Eggs also add moisture, flavor, and protein to gluten-free bread recipes. Should coconut flour be refrigerated? ›

When stored properly, coconut flour will last for up to two years. The best way to store coconut flour is in an airtight container in a cool, dark place, such as the pantry, fridge, or freezer.

Can I replace all-purpose flour with coconut flour? ›

Coconut Flour Substitute

You have to do a little playing around with a recipe if you want to substitute coconut flour for regular all-purpose wheat flour. The rule of thumb is to substitute only 20 percent of coconut for wheat flour. Flour made from coconut becomes dense and soaks up a lot of moisture when it bakes.

Why is gluten free bread so hard to make? ›

GF flours are very absorbent, so if you don't include the right ratio of dry and wet ingredients, you'll end up with a gluten free bread loaf that's dry and crumbly.

Why does my banana bread taste like nothing? ›

Skimping on the sugar can dry out a loaf of banana bread and leave it flavorless. It turns out, sugar does more than just make things sweeter. When it comes to banana bread, cutting back on sugar will leave you with a dry loaf totally devoid of any distinguishable flavor.

Why is my banana bread dense and not fluffy? ›

You Over-Mix the Batter

For soft and tender banana bread, gently stir the wet ingredients into the dry — don't overmix! The more you stir, the more gluten will develop. The result will be a tough, rubbery banana bread. Simply stir until moist, and then do no more.
